Cantabrian anchovies, caught in spring fishing by small sustainable fisheries, are made by hand, preparing each one by hand, for maturation in vinegar.
Once marinated, anchovies are preserved in extra virgin olive oil Bravoleum with garlic and parsley, according to the traditional Cantabrian recipe, which in addition to maintaining its firm and silky texture, praises its unique flavor.

THE PRESERVES

The Cantabrian Tuna (Thunnus alalunga) also known as white tuna is a blue fish belonging to the tuna family. Its intense flavour and smooth texture of white meat, make this variety as the most exquisite and valued of its species.

The capturing season takes place from May to October, when the large groups of fishing banks arrive to the Cantabrian Sea. They are captured with great skill and organization, as they are only fished one by one using live bait.

The sheets of PEZ & CO Cantabrian White Tuna in Extra Virgin Olive Oil Bravoleum are carefully selected and thanks to its cut the oil can be easily absorbed among the natural sheets of the tuna meat. This achieves and even softer texture as well as an extraordinary aroma and flavour.

The Cantabrian Tuna belly is the most tender and smooth part of the fish and for many, the most appreciated among consumers. Located in the lower part of the fish (in the zone close to the head) the belly stands out for its great flavour and juiciness. It has a silky texture which is characterized by its large proportion of fat and smoother laminated meat.

Being the most delicate part of the fish, it must be prepared only by the hands of our experts. As a result, the portions are completely clean and are packaged (without filleting) in one single piece, maintaining this way the natural fat between the sheets for an even smoother texture.

The Extra Virgin Olive Oil Bravoleum gives the PEZ & CO Cantabrian white tuna belly a very special and extraordinary flavour that keep on improving over the time.
